No-Alcohol Eggnog

Sweet, rich and effervescent, somewhere between traditional eggnog and an ice cream float this alcohol-free eggnog recipe is an absolute favorite with kids.

Eggnog for Kids Recipe

(Serves 8)

Ingredients: 12 large eggs (For food safety, use pasturized eggs only. Regular eggs raw present a risk for illness.)

2/3 cup of honey

3 cups whole milk

3 cups vanilla ice cream

2 teaspoons vanilla

3 cups of ginger ale

2 teaspoons of nutmeg

1 Separate the eggs from the yolks.
Tip: if you crack and egg half way on the edge of your bowl and pry it the rest of the way open, into two halves, you can transfer the yolk back and forth between the two shell halves until all of the white has fallen into the bowl.

2: Beat the yolks with the honey until thick and creamy. This will take about five to seven minutes.
Tip: if you are substituting sugar for the honey increase the amount to 3/4 cup.

3: In a separate bowl beat the egg whites until stiff peaks form.
Tip: always use a clean glass or metal bowl when whipping egg whites — never plastic.

4: In a blender (or with a mixer, if you prefer) combine the milk, the ice cream and the vanilla and blend until it is the consistency of a milkshake.

5: Pour the ice cream mixture into the bowl with the egg yolks and combine. Fold in the egg whites. The mixture will be very thick and creamy. Pour in the chilled ginger ale and stir well to mix.

6: Ladle eggnog into glasses, top with nutmeg and serve.

Other kid friendly variations: Top with cinnamon or place a whole cinnamon stick in the glass for the kids to use as a stir stick.

Chocolate eggnog – Use chocolate milk and chocolate ice cream. Top with chocolate shavings or a sprinkle of cocoa.

Peppermint eggnog – substitute the vanilla with a dash of peppermint extract. Top with red and green sprinkles or finely ground candy canes. You can do this with the chocolate eggnog as well for a delicious chocolate peppermint eggnog.

Orange eggnog – substitute orange juice for the milk and orange soda for the ginger ale. Garnish with a slice of orange on the rim or sprinkle some orange zest on top.

You can add brandy or rum (as little or as much as you like) to any of the above versions to create a tasty adult version.
Tip: If you have leftover eggnog, refrigerate until morning and use to make a special holiday version of French toast.
